chia puding recept

- 4 tbs chia seeds
- 1 cup of organic coconut milk (you can also use almond milk)
- 1 cup raw cashews (soaked for 2 hours and drained)
- 4 medjool dates (datolya)
- 1 banana
- 1 tsp cinnamon
- a vanilla pod or some vanilla powder
- pinch of Himalayan pink salt
Soak chia seeds in coconut milk for an hour or so, the chia seeds will swell as they absorb the milk to give a tapioca-like texture.
Combine cashews, banana and dates in food processor and blend until the dates are finely chopped (I find they don’t get as smooth as I want them if I don’t do this before adding the chia seeds). Add chia seeds mix and cinnamon, vanilla and salt to taste. blend until smooth.
Divide mixture into three or four containers, and add garnish as desired. I love it with strawberries, raspberries, blueberries and chopped walnuts but experiment with whatever you like -
Chill in the refrigerator......Your whole family will love this

love pesto, but of course not the traditional pesto with lots of oil and cheese......So I came up with this wonderful Vegan-Raw healthier version with no processed oils, just fresh organic vegetables and natural oils......
Here are the ingredients.....
- 2 cups, washed, loosely packed stemmed fresh herbs- basil, cilantro, parsley, mint
- 1/2 cup shelled walnuts
- 1-2 cloves fresh garlic
- 1 tsp of white organic miso
- 1/2 (or whole if you prefer) avocado
Now just blend all the ingredients until smooth and delicious........ that is it!
I love to dip vegetables, use it as a sauce for artichokes, top it on a Portobello mushroom. As pictured, use it on cucumbers and other fresh vegetables. . Your non-vegan friends and family will feel a rejuvenation when you tell them that the delicious pesto they are was vegan and processed oil free.
