- 4 tbs chia seeds
- 1 cup of organic coconut milk (you can also use almond milk)
- 1 cup raw cashews (soaked for 2 hours and drained)
- 4 medjool dates (datolya)
- 1 banana
- 1 tsp cinnamon
- a vanilla pod or some vanilla powder
- pinch of Himalayan pink salt
Soak chia seeds in coconut milk for an hour or so, the chia seeds will swell as they absorb the milk to give a tapioca-like texture.
Combine cashews, banana and dates in food processor and blend until the dates are finely chopped (I find they don’t get as smooth as I want them if I don’t do this before adding the chia seeds). Add chia seeds mix and cinnamon, vanilla and salt to taste. blend until smooth.
Divide mixture into three or four containers, and add garnish as desired. I love it with strawberries, raspberries, blueberries and chopped walnuts but experiment with whatever you like -
